As I’ve mentioned before, I love crock-pots. My favorite dessert recipe for the crock-pot is Coconut Rice Pudding. It is a cool dessert that is perfect to serve in the summertime.
Again, it is simple, cheap, and fairly healthy (can a recipe with a quart of half-and-half be called healthy?). My daughter also loves it. My mom tried it this weekend for the first time and loved it too. Everything I look for in a recipe.
Coconut-Rice Pudding
I make this in my medium size Crock-Pot, and it makes about eight servings.
Ingredients:
3/4 cup jasmine rice
One 14 ounce can lite coconut milk
1 quart half-and-half
1/2 cup sugar
2 teaspoons vanilla extract
1 teaspoon coconut extract
1. Coat the slow cooker with cooking spray. Combine rice and coconut milk in the crock-pot.
2. In a saucepan over medium heat, whisk together the half-and-half and sugar. Heat until bubbles appear around the edges. You don’t want it to boil or bubble up. (Be careful walking away from the stove. I’ve had it bubble up over the pan twice on me.)
3. Pour hot cream and sugar mixture into crock-pot and whisk together. Cover and cook on low for about 3 hours.
4. Turn off slow cooker. Stir in extracts, and let the pudding cool with lid half on for about 30 minutes. You can serve it warm or cold. In the summer, I always serve it cold.
Notes: When I feel fancy, I toast some shredded, unsweetened coconut and throw that on top before serving. Just heat the coconut in a small frying pan until it turns golden. It’s yummy, but not necessary.
I buy organic coconut milk and organic jasmine rice at Whole Foods. I buy the store brand for both items, and they are good prices. I found the coconut extract at Krogers. Whole Foods didn’t have it, or if they did, it was very expensive. Next time I make the recipe, I plan on trying to use whole milk instead of half-and-half to cut calories. I will let you know how it turns out.

It is a good recipe. Just remember, you need to make this recipe in a medium crock-pot (or maybe a large, although I have never tried that. I think it would work.). But it would be too much for a small crock-pot.
